Sweet and Sour Chik ‘n

1 pkg frozen Boca Meatless Chik ‘n Nuggets
2 cups frozen vegetable blend (broccoli, carrots and water chestnuts)
1/2 cup onion, chopped
1/2 cup red bell pepper, chopped
1 can (8 oz) pineapple chunks in juice, drained with juice reserved
½ cup sweet and sour sauce
¼ cup water
2 tsp cornstarch
2 cups hot cooked brown rice

Bake nuggets as directed on package. Saute the onion and red bell pepper in a non stick skillet until almost soft. Then bring vegetables, pineapple chunks, sweet and sour sauce and water to a boil in a large saucepan on medium high heat, cover. Simmer on medium low heat for 5 minutes. Stir frequently. Mix cornstarch and reserved pineapple juice until well blended. Add to vegetable mixture, cook 1 minute or until thickened. Stir constantly.
Serve nuggets over rice and top with vegetable mixture.

I like to cut the nuggets in fourths, just to make them easier to eat.
